Quote and bill in their currency.
There is no separate multi-currency sales-order document. On Business+, quote in Sales → Estimates and bill in Sales → Invoices in the customer's currency. Set the rate on the document, collect via Stripe or PayPal, then match the payment in Banking → Reconcile after CSV import. Solo is GBP-only.
